Vinification
Traditional winemaking to keep the freshness and aromatic intensity. The must is vinified at low temperature and aged for a short period of time to preserve the delicate citrus fruit aromas that are typical of the Koshu grape.
Commentary
Attractive pale yellow color with green hints and beautiful depth. Lustrous, clear and sparkling. Intense, complex, and instantly highly seductive nose. There are aromas of white flowers: hawthorn and honeysuckle, and the fragrance of ripe fruits: apple, white fleshed orchard fruits such as peach or exotic fruit. A forthright wine in the mouth, instantly full and round on the palate.

Training the vines
Pergola trellising, known as Tanashiki-saibai: facilitates harvesting and keeps clusters far above the ground, which is damp most of the year. If clusters were too close, it would encourage diseases.
