Tasting
The wine's color is light, and the nose offers relative complexity, mainly dominated by Sauvignon. The wine has good density, pleasant freshness and good length on the palate.
Nose of William pear, spice and woody notes. Fresh, invigorating, fruity, racy and lemony on the finish.
Food & wine pairing
This wine goes very well with seafood and white fish such as sea bass or sole, cooked simply with fresh herbs and a light sauce. You can also enjoy it with roast poultry or a creamy sauce. Afterwards, a fresh salad with citrus fruits, avocado or walnuts is an option. Finally, fresh or mature goat's cheeses, as well as soft cheeses such as Brie, can be good partners for this wine.

- Vinification :
- First sorting in the vineyard
- Entire harvest in small crates
- Pressing of the whole harvest with a pneumatic press for about 2 hours
- Cold settling for 24 hours.
- Cold liquid stabulation for 6 to 8 days
- Alcoholic fermentation in cement vats for Sauvignon and in new barrels for Sémillon between 15°C and 18°C for about 15 days.
- Aged on fine lees for 8 to 10 months with stirring of the lees 1 to 2 times a week.
- This wine is neither pumped nor filtered until bottled: all vinification and ageing operations are carried out by gravity.
For white wines from the Haut-Médoc region, the 2015 vintage was marked by ideal weather conditions, giving rise to wines of exceptional quality. In addition, the moderate drought encouraged a concentration of aromas and flavors in the berries, contributing to the complexity of the wines.
Overall, the 2015 vintage is distinguished by white wines of great depth and structure, with rich aromas and refreshing acidity. This vintage offers wine lovers an exceptional taste experience, highlighting the finesse and elegance characteristic of white wines from the Haut-Médoc region. Thanks to ideal weather conditions, the winemakers were able to produce white wines of exceptional quality, reflecting the region's outstanding terroir.
