Wine Singularities

Climate

  • Trellised vines
  • Soil preparation
  • Sustainable viticulture
  • Oxygen-free pressing of grapes
  • Fermentation at 18°C
  • Short aging period of 2 months before bottling
  • Winter temperatures in the IGP Méditerranée appellation are generally mild, with lows rarely dipping below zero degrees Celsius. Days can be cool, but prolonged frosts are rare. Rainfall is frequent during this period, contributing to soil moisture that will be beneficial for the coming growing season.
  • Spring brings milder, more pleasant temperatures, with gradually warmer days. Precipitation starts to fall as the season progresses, but soils still retain a certain amount of moisture. This is a crucial period for the vine, as growth resumes and buds develop to form new shoots and bunches of grapes.
  • Summers in the IGP Méditerranée appellation are hot, dry and sunny. Summer temperatures can regularly exceed 30 degrees Celsius, favoring optimal ripening of the grapes. Low humidity and abundant sunshine contribute to ideal conditions for vine-growing. However, good irrigation management is often necessary to ensure healthy vines during periods of intense heat.
  • Autumn is characterized by pleasant days and cool nights. Temperatures remain generally mild, allowing the grapes to ripen without undue heat stress. Rainfall remains relatively low, which is beneficial for the grape harvest. Harvesting takes place at this time, when the grapes have reached full aromatic and phenolic maturity.
