Filling of the pneumatic press entirely by hand. Pressing of whole, uncrushed berries applying a very slow increase in pressure under inert atmosphere. Running off of the press juices into barrel by gravity-flow. Settling of the juices and vinification in French oak barrels and in concrete eggs. Ageing on the fine lees with bâtonnage.
