  • Spring in the Languedoc is generally pleasant, with temperatures gradually warming up. This is a crucial period for the vines, as it's the time for flowering and the setting of the grapes.
  • Summer in the Languedoc is hot and dry, with sunny days and high temperatures. This is the season for ripening grapes for rosé wine production. Harvesting for rosé wines often takes place early in the season to capture the freshness and vivacity of the grapes.
  • Autumn is an ideal time for harvesting grapes in the Languedoc. The days are still warm, but the nights start to get cool, allowing the grapes to retain their natural acidity. This is when Bleu de Mer rosé wine is made from the harvested grapes.
  • Winter is mild in the Languedoc, with generally mild temperatures. It's a period of rest for the vines, and also a time for pruning and preparation for the following season.
